Day by day it is getting impossible to reach to the natural and healthy food, for this reason Coq Au Vin, which we use organically fed ranch roosters in it’s the recipe, is a very special and precious meal.
For this classic French recipe we marinate the rooster with cognac for one day, and before roasting, cook it over low-heat with braised shallots and sauteed mushrooms in full-bodied red wine for three hours.
